Hi Frederik, I found it at a store where you can purchase ingredients for wine, beer and liqueur making. The one I ordered from is located in the Netherlands, but I did a quick check and if you look for ‘wine making’, ‘brewery’ etc, you come across lots of websites that sell all the acids.

Hi, i was wondering have you ever brought dry ice. If so, where could i get some. Please note I’m only 13, so could i get it ordered?
I haven’t used it yet. I found a company where I live (via the internet) that sells it, but you have to be 18 (there are some mandatory safety issues), so, if you can, get someone else to order it for you. Just look online for dry ice to find a supplier in your region.

Can’t help you there. I’ve no experiences with any company and it will differ per country. I would just call a few to see if they deliver quantities other than wholesale and what they charge.
Hey For anyone who needs to by Gum Arabic;
Gum Arabic is also known as Goonder in Indian food stores. Its small crystals which can be ground to create powder.

This particular link Jimmy is making spray dried instant coffee but I don’t see why the same technique couldn’t be used to make other spray dried products from the Fat Duck book.

Regarding Gelatin Bloom, I already had both the powdered and the leaf gelatin from Dr Oetker but neither stated the bloom on the pack. I emailed them asking what the bloom was and got this back:

Bloom gelatin – means to saok in water so ready to use\
Bloom gelatin does *not* mean “soak in water”. It refers to a measurement given by the bloom test.

As far as I can tell: dry ice on the bottom of the bowl, orange essential oil in the measuring cup, hot water added to the essential oil, the hot oil/water mix poured on the cool dry ice. From what I’ve seen, it’s often used at The Fat Duck to release aromas on and around the table.
